There's nothing quite like a good banana bread recipe for the start of summer... the very ripe bananas and (unsweetened) applesauce actually sweeten it naturally so you don't have to put too much extra sugar and also makes it very moist. Enjoy!
----
4 Very Ripe Bananas (practically black in color)
⅓ Cup Maple Syrup
2 Eggs
½ Cup Applesauce
1 Tsp Vanilla Extract
¾ Cup Flour
1 Cup Almond Flour
1 Tsp Baking Soda
¼ Tsp Salt
Dash of Cinnamon
Optional: Dark Chocolate Chips
Flax Seeds
Chopped Walnuts/Pecans
1. Preheat oven at 350 degrees. Mash the bananas in a bowl. Mix in all of the wet ingredients first, then stir in the dry ingredients.
2. Line a loaf pan with parchment paper and bake for 50-55 minutes until center comes out dry when checking with a toothpick. *If it is browning too soon, cover with aluminum foil and finish baking.
