I've always had a curiosity and liking to cooking-- starting from when I was little, my mom allowed us to help her in the kitchen, and as I grew up I often helped and wrote down recipes beside her as we made dinner together. 

It really helped build my confidence and equip me with the basics, so when I got married I had a foundation to work from. Nowadays with a newborn baby, it is a bit more difficult to make extravagant meals-- let alone meals from day to day. Since our baby tends to be more fussy and wants to be with mamma all the time, I have to find time and other ways to make meals. (Sometimes she's on me as I wear her on my Tushbaby, other times I 'll place her in the bouncer, or sometimes it's during her nap). 

Today was a good day, she slept for another 7 hours last night (with one feeding at 2am) praise God for new days and His grace everyday!

My husband was also home during the day so I was able to make this dish as he played with the baby. I will warn you though, it is quite messy and makes many dishes to wash after (only downside). But once it is done, you can enjoy it for days as leftovers. Perfect for this winter weather.

Sweet or spicy Italian Sausage
Broccoli Rabe
2 garlic cloves
Salt
Extra Virgin Olive oil
Pappardelle pasta 
Parmiggiano Reggiano cheese 
 
1. Rinse the broccoli rabe with water and then place it in a pot to boil in water for few minutes, so that it softens and the bitter taste is removed. 
2. In another pot, boil the sausage until tender and cooked. 
3. In another pot, follow instructions to boil the pasta. 
4. Once the sausage is cooked, slice off the casing and slice it into small pieces. Set aside. 
5. Remove the broccoli rabe once it's been boiled and set aside into a dish. 
6. In a pan, sauté a few sliced pieces of garlic cloves in extra virgin olive oil and then place the sausage and broccoli rabe together in the pan. 
7. Sauté it for a bit, add parmiggiano reggiano (to heart's content).
8. Once the pasta is cooked, with a tong begin adding the pappardelle pasta to the broccoli rabe and sausage. 
9. Continue sautéing and adding salt, a bit more of olive oil and parmiggiano reggiano cheese.  
10. Enjoy with some warm crusty Italian bread-- Buon Appetito!
